Why create a plant-based egg?
The single biggest individual impact you can make for the planet is the food you eat. We created an egg using the protein from mung beans, one of the most sustainable crops on the planet. JUST Egg’s ingredients use 98% less water, produce 93% less carbon and use 86% less land to produce than a conventional egg. So far, we’ve sold the JUST Egg equivalent of more than 34 million eggs, saving over 1 billion gallons of water and 5 million kilograms of CO2, and using 2,000 fewer acres of land.
What exactly is JUST egg?
JUST Egg liquid comes in a 12-ounce bottle, and it’s sold in the refrigerated egg section of most retailers. It’s free of the top 8 allergens, with the exception of soy, and it’s non-GMO, plant-based and cholesterol-free. It scrambles and tastes just like conventional eggs, and it can also be used in recipes from omelets to frittatas. JUST Egg can be used in almost any way you would cook with eggs.
How is it used in baking?
It can be used in many baking applications like quick breads, muffins and cookies. Assuming a chicken egg is 1.5-2 oz of liquid, you can swap each egg in a recipe for 3 to 4 tablespoons of JUST Egg or if you want to be precise, our bakers use 50 grams of JUST Egg to replace 1 chicken egg. We recently launched a ready-made folded egg, and the ingredients are free of the top 8 allergens. Folded JUST Egg is incredibly convenient because it’s already cooked and it can be popped in a toaster, microwave or skillet to reheat. It’s not just easy to use—it’s also delicious. Our team of food scientists and Michelin-starred chefs came up with the perfect product for your breakfast sandwich, stir-fry or salad. It’s now on sale in the freezer section of all Whole Foods, and you’ll see it in additional retailers soon.
What allergens are in your facilities?
We understand how important facility-level information is to the allergy community. While not required, we are releasing detailed facility information to make it easier for those with food allergies. Our liquid and folded products are made in two different facilities, and you can click here for full details and read more in our Allergen FAQ in the Spokin App. JUST Egg is made on equipment free of egg, although there is egg present in the same facility. Milk, tree nuts, crustacean/shellfish, and sesame are present in the facility and fish and wheat are used on the same equipment. The facility for JUST Egg Folded is dedicated free of peanut, fish, crustacean/shellfish and sesame. It is made on shared lines with egg, dairy, soy and wheat. There are tree nuts in the facility. We have extensive cleaning and testing procedures in place to protect against cross contamination.
No detail is too small
We have allergen safety training and we clean all equipment using a procedure proven to remove traces of egg. We test equipment surfaces for egg at key locations before processing begins and then we test the first product packaged from each run. When shared equipment is used, we test each batch for traces of egg and no product is released to market until all testing is complete.
How do you label for allergens?
If a product contains any of the top 8 allergens, we list them in bold in a contains statement. The only top 8 allergen we currently have is soy in the liquid JUST Egg. JUST Egg Folded is free of the top 8 allergens. While not required, we will be voluntarily adding shared facility and shared equipment information to our labels. You’ll see these showing up on our packages later this summer. This change is part of our commitment to be as transparent as possible with the food allergy community—nothing has changed in our facilities or ingredients.
Which came first?
While our company started out with the goal to create sustainable food, we know egg allergies are the third most common allergy among children and the sixth most prevalent in adults. That’s 2% of children in the U.S. and 2 million adults. It affects the whole household when one family member has an egg allergy. While we didn’t set out to create a product for the egg allergic community, we realize that JUST Egg brings back so many options for egg allergy families.
