Key Lime Pie Popsicles
PREP TIME: 5 minutes
TOTAL TIME: 5 hours
2 tsp lime zest
3/4 cup fresh squeezed lime juice (approx 4 limes or 6-7 key limes)
1 can (14 oz) of sweetened condensed milk
1 cup of half and half
Pinch of Salt
3 cups crushed GF Graham Cracker Cookie *OPTIONAL*
Inspired by this recipe from one of our favorite blogs, Smittenkitchen, we adapted our version to make it gluten and wheat free. We used Zoku pop molds which come with built in popsicle sticks. This treat is great for kids and adults alike.
1. Combine lime zest, lime juice, condensed milk, half and half, and a pinch of salt in a bowl and whisk together
2. Once combined pour into popsicle molds and allow to freeze for approximately 5 hours
3. If using, crush 3 cups of gluten free graham crackerand set aside on a plate
4. When you are ready to serve, dip mold into lukewarm water for 10 seconds to "unmold" the popsicles. Then press each side of the popsicle into the cookie crumb, covering completely
Spokin Tip: By leaving out the gluten free graham crackers these pops will be safe across a wider range of allergies. If you want to include them be sure to check the label for any food warnings. The brand recommended in this recipe contains a warning that the crackers may contain eggs and soy.
