Simple Summer Crumble Recipe

PREP TIME: 20 minutes
TOTAL TIME: 1 hour 10 minutes

INGREDIENTS

For the crumble

2/3 cup gluten free oats
2/3 cup
 cup4cup gluten free flour
1/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/2 tsp salt
6 tbs cold butter

For the filling

1/2 cup sugar
1 1/2 lbs of honey crisp apples (about 3) cut into 1" thick pieces
8 stalks of rhubarb
1 tbs fresh squeezed lemon juice
1 tsp vanilla extract

Dessert containing fruit is essentially guilt free, leaving plenty of room to add a crumble topping. We adapted this versatile and easy to follow recipe from Bon Appetit and made it gluten and wheat free. The best part? The only tool required is your hands!

DIRECTIONS

1. Preheat oven to 350 degrees

2. Mix together oats, flour, brown sugar, cinnamon, and salt in a bowl

3. Dice the cold butter into small cubes and use your hands to work it through the oat and flour mixture until there are no dry spots

4. Mix together filling ingredients in a separate bowl until they are combined

5. Grease a 2 qt baking dish and pour the filling into the dish spreading it out evenly

6. Sprinkle the crumble on top and place in the oven for 35-50 minutes or until the top is golden brown and juicing are bubbling

7. Allow to cool slightly, serve, and enjoy!
